  1. In a large pan, heat about a tbsp of avocado oil over medium high heat.
  2. Once hot, but not smoking, add the veggies.
  3. Mix occasionally letting the veggies brown nicely on as many sides as possible.
  4. Once browned to your liking, add one pinch of salt then mix then add another pinch of salt.
  5. Add the garlic on top, cover, and turn the heat down to low.
  6. Cook for 3-4 minutes, test for doneness, then either continue cooking to your desired doneness or remove cover and mix. You may need to let it cook uncovered for a minute to let any accumulated liquid burn off.
  7. Serve immediately.
